Fine-dining restaurant with a veganizable tasting menu - Edit
The place got a Michelin star for the food in 2023 and also one for sustainability.
Upon (prior) request, they veganize their vegetarian tasting menu. To some extent that simply meant that courses with animal products were dropped from the 15 course menu (we only got 12 courses, I think, as most of the desserts were dropped, but they then also charged less).
"Course" is quite a generous description though, as the portions were really tiny. Had we gotten all the 15 courses, I'd have been still OK afterwards, I think, but as it was I had a falafel downtown before we returned to our apartment.
The courses on the remaining menu were mostly good, though. The "Beetroot" course was pretty much just that, fairly bland beetroot (where some vegan feta mousse or mint soyghurt or some nuts or whatever could have made a real difference). 2-3 of the other courses were only average, but the rest was good - the chef played a lot with the acidity in the dishes, which was a bit unusual and which I liked.
The place seemed to operate only/mostly outside, on a terrace in the courtyard, surrounded by residential buildings. For a such a restaurant the seating was perhaps a bit crowded and cramped, and the chairs had no cushion, which made them slightly uncomfortable. I also didn't like that we didn't have a dedicated server and the food was brought by whoever and presented in a hurried manner which made it difficult to understand, and what seemed to be the head waiter was talking a bit too loudly, perhaps because there was a rather "busy" atmosphere already.
But overall I liked the dinner and I would go there again!
