Great option for the central markets - Edit
This place was so good! It have a vegetarian Casado option and you can pick between cheese, eggs or avocado in place of the meat. They also have tortilla de papas which was good but compared to the portion size of the Casado worth 3,700 it was kinda small for being 2,000 and everything you get on that dish you can get on the casados which can probably feed two people as the portions were huge! Definitely worth it!

They asked whether I wanted cheese or egg.
The food was OK, nothing to write home about. Rice, beans, vegetables. The primary flavor was salt. I didn’t eat the beet salad because it looked potentially creamy.
Pros: Inside central market , Fast, Server was helpful despite being rushed

Great Costa Rican food in huge portions! They substituted avocado for the animal products in the Casado vegetariano for me.

The one real veg dish was delicious - Edit
After circling the Central Market for 30 min looking for anything veg, I found this place. After getting over the ick factor of the traditional meat items on the menu, I found a "plato vegetariano" with super yummy beans and rice, fried plantains, stewed veggies, salad, tortilla, corn chips, and sliced avocado. Juice was also delicious.
