Excellent vegan hot pot in Chengdu's Tibetan district - Edit
This is a great hot pot restaurant for vegans and vegetarians. The staff is knowledgeable and right away asks what you can/cannot eat (i.e. eggs, dairy, etc.). Nearly everything on the menu is vegan and there are really good seasonal dishes available - if you accidentally order something that isn't vegan after telling the staff that you are vegan, they will helpfully inform you. The free tea is also some of the best we had in China. I would recommend getting one of the salads along with your hot pot.

Please note, it can be difficult to find this restaurant for visitors to China. On the menu, the restaurant's name is 4000 Plateaus, but to find it in the Amap app, look for "Siqian Plateau Yunnan Juntang".
