Hiding In Plain Sight - Edit
I’m not a fan of vegan cheese so pizza is something I usually don’t eat. That is until I went to Nicky’s Coal Fired restaurant last fall. Not only do they have a vegan option pizza, it’s absolutely out-of-this-world delicious! Other Happy Cows need to know about them! Their vegan meat alternatives and vegan mozzarella are locally sourced from BE-Hive (also in Nashville). The texture of the meat and consistency of the cheese really reminded me of my pre-vegan day pizzas. Anytime we’re in Nashville, we will stop in to say hi to Caroline and Tony and grab a vegan pie.
