No vegan options on the menu - Edit
The menu changed and there are no vegan options anymore. However, the cook was super friendly and prepared crispy sandwiches with avocado, tomato, rocket and tasty seasoning. Furthermore, he served some falafel - which are not even on the menu - on the house. So it was a very nice experience but you have to be lucky to get it.

Cuando hemos ido nosotros a comer tenía 2 opciones vegetarianas que se podían veganizar quitándoles el queso. La ensalada que comí muy buena. Tiene leche de avena para el café. Muy buen ambiente y personal muy amable que hablaba inglés.

Not clearly labeled vegan items but still tasty! - Edit
Really enjoyed the retro and fun yet tasteful decor at Nibble. Friendly staff. But some items are not clearly marked as vegan even in the English version of the menu.

- Falafel & Hummus: Absolutely delicious and perhaps one of the best falafel/hummus plates I’ve had! The small frisee salad that’s included with it offers a nice refreshing bite.
- Avocado Croissant Toast: While I was aware this was a vegetarian (not vegan) dish because of the poached egg and likely dairy products used for the croissant, the menu did NOT mention there are cheese shavings as part of the salad that sits on top of the croissant. I decided to eat around the cheese which was inconvenient but the dish otherwise tasted good. (I ended up supplementing with a second order for the Falafel & Hummus).
Be mindful of the limited yet tasty array of vegan items available at Nibble — the Açaí Bowl is supposedly vegan (as well as the Falafel & Hummus dish). Would have liked to order a tea or juice but wasn’t sure what ingredients were used (as that portion of the menu had not been translated into English).
Also, portion size was small and dishes were a bit pricy compared to other brunch spots in Korea.
