Incorporates 3 concepts, based on high-quality organic and locally sourced ingredients: the restaurant menu is inspired by Italian and Mediterranean cuisine, while the pizza dough is freshly prepared every day with an mix of Italian gluten-free flours, for a more digestible alternative. Sushi chefs combine fine quality ingredients with artistic flair. Specialities include potato gnocchi with cashew cheese, pepper and truffle, pumpkin flowers with almond ricotta, cashew mozzarella, capers, mint and peas cream, and spicy agave syrup, and "Milanese" oyster mushroom cutlet with saffron mayo.
