Really enjoyed the vegan ramen (and sides such as edamame). The Japanese drinks were also really nice.

Excluding sides there was one option on the menu - Vegetarian Dashi. It can be veganised by removing the egg.
Read moreIt was super yummy, full of flavour and fun to eat. I enjoyed that the noodles where whole-wheat but were cooked perfectly. I recommend it if you’re looking for a good bowl of ramen.

Just posting about this... I am feeling so hungry again. Earlier I had a delicious bowl of plant-based ramen @ippudosg , founded in Japan in 1985 which crafts authentic artisan ramen. 😍The awesome news here is that, IPPUDO has recreated its global signature ramen Akamaru Shinaji for plant-based consumers (vegan ok) and it’s called Akamaru 1.0. It will be launched for a limited period of time, from 4th May to 30th Jun 21 in all outlets. It cost $18.85 at MBS outlet & $16.85 for the rest of the outlets. Akamaru 1.0 contain alliums but they have another ramen in their menu (i.e. Veggie Dashi, see photo for menu) which broth is alliums free and can requests for alliums free ingredient/ egg free.
Read moreAkamaru 1.0 bowl is a collab with @growthwellfoods , a local plant-based nutrition company specialising in plant-based foodie. The plant based ChaShu is made with premium non-GMO soy and marinated with IPPUDO’s signature soy ChaShu sauce. It is high in protein and free of cholesterol, GMO and preservatives. 😋 super likey the chashu! I ate finish both slices and was thinking about having more (haha greedy). Healthy and yummy plant based chashu (~understand that the chashu is alliums free!) Akamaru 1.0 broth is made of mushroom, soy milk, IPPUDO’s original kaeshi (Soy Sauce) and aromatic porcini mushroom oil. It’s served with homemade eggless whole wheat noodles, black fungus, spring onion, special blended spicy paste (v. mild spicy to me, suitable for all level of spicy taker) and fragrant garlic oil. The soup is so tasty that I just can’t stop drinking…so comforting. It’s thick in soy flavour and the bowl has v. generous portion of ingredients. I had a very filling delicious meal that day and will go back for another bowl definitely...! Hopefully we can create huge demand of this and they will put in their all time menu... haha.
I also tried the cucumber side dish, edamame, green tea, & sparkling sake 😋 love the greens alot. Outlet serve non-alcoholic & alcoholic drinks yeah🍶~

IPPUDO has recreated its global signature ramen using a new plant based chashu and making it vegan! Called Akamaru 1.0, it will be available at all their eight dining outlets in SG from 4 May to 30 June 2021. Hopefully they will extend this.
Read moreI love the amazingly rich broth made with mushroom, soy milk, IPPUDO's original kaeshi (soy sauce) and a dash of aromatic porcini mushroom oil. It is so good that I practically slurped up every precious drop!
Another highlight is of course the Plant-based soy chashu in collaboration with Growthwell Singapore, a local plant-based nutrition company, marinated in IPPUDO’s signature kaeshi (soy sauce) and made with premium non-GMO soy. The chashu is high in protein and free of cholesterol, genetically modified organisms and preservatives. I love the texture, with a mix of tenderness and bite!
The bowl is served with homemade eggless, whole wheat noodles alongside toppings like black fungus, spring onion, special blended spicy paste and fragrant garlic oil, that promises to excite your taste buds and raise your eyebrows! Each bowl is priced at $16.85 (MBS outlet: $18.85)
For the allium-free, they have an allium free vegan Ramen in their permanent menu
