Spectacular-and not fully vegan

I came to Hanbey Fu after reading the review here and the restaurant ia beautiful, traditional old Kyoto establishment serving phenomenal variations of Fu (wheat gluten, but so much more versatile than seitan) and versions of soya milk skim (like clotted cream) ranging from creamy fresh to dried and fried.
All beautifully seasoned with kombu (seaweed), bean paste, Japanese mustard - all very delicate and elegant.

But - traditionally the seasoning stock is made with a combination with Dashi (fish) and Kombu (kelp)

So when I arrived expecting fully vegan restaurant (and without a reservation!) they were incredibly kind to accommodate me and with help of AI translator explain that i will have to wait as broth needs to be freshly made without fish.

The wait was not really long and it was spectacularly worth it.

The restaurant is asking if Happy Cow can amend the fully vegan listing and also for a reservation and 3 days notice to ensure full experience with only vegan ingredients.

It was absolutely one of my Japan high points and one of the more memorable meals of my life - please book and let them know you are vegan!

So many delicious forms of Fu

This restaurant offers one set menu centered around Fu (wheat gluten).
At first you get a big plate with several dishes including nama-fu, pickles and rice. After about 10 minutes we got another plate of fresh yuba which was extremely creamy. After that we got served several other dishes freshly prepared to have the perfect temperature for eating right away.

The presentation of the food was beautiful, the smell was nice, the taste was undesirably delicious and the overall portions bigger than I was expecting.
My friend (Japanese) also pointed out that a lot of the ingredients used were one of the best in Japan, for example the special Yuzu used for the dessert.

You enter an traditional japanese house and are greated with an japanese garden and an rather big museum you can take a look at. There are tables on this and on the second floor. The interior of the second floor is traditional western and looks very fancy.

The staff is very friendly and service is quick.

Overall an very nice experience. Considering everything you get there from the service to the atmosphere to the museum and of course the extremely delicious food, 4500¥ can be considered a very fair price!
I will definitely go back!
