Incredible! - Edit
They now have a seated dining experience in another section of edgewater market. Every dish we tried was delicious and service was great. Don’t sleep on the gnocchi and the strawberry rhubarb cake.

The best restaurant in Denver. - Edit
Today was the reopening in the old Metaburger location. The sit-down area of the restaurant is very nice, with a bar and tables. The service was great. The menu expansion seems fantastic.

Wow! Everything here is just excellent. The gnocchi and the Reuben are both the best of each I’ve ever had.

Mind blowing - Edit
Update: Gladys now has seating and an expanded menu. All the food was wonderful as always, the garlic bread we had as an app was especially exceptional. They have also added a few n/a drinks, kombucha, etc. Remains my favorite restaurant of all time, now it's somehow even a little bit better.

Possibly my favorite restaurant in Denver. Everything is vegan (I think, they might occasionally have dairy options). Changing menu, great food, and the desserts are so good too!

Unique dishes executed perfectly! - Edit
I might have to say this is the best food I’ve had in years! We came here 3 times in 2 days during our trip to Denver. We ordered the Reuben and the risotto all three times, and also had the sweet pea toast once. The Reuben and risotto are the best I’ve ever had. I’ve never heard of celery root being used as a meat substitute before, so I was very surprised how well it worked when trying it. The sweet pea toast was also very good, the produce they use is incredibly fresh.

Might be the best in Denver - Edit
Delicious, creative and plant forward vegan food in Sloans Lake. Pretty reasonable prices, and rotating menu with the seasons. Some favorites are the mushroom risotto, Ruben, and chocolate chip cookies. You can’t go wrong with Gladys!

Excellent vegetable focused food. Not a faux meat centered menu trying to appeal to the masses. Just good cooking from a talented bunch. 11/10

Upscale food at a food court - Edit
The food quality is unreal. Something you'd find at a high end restaurant, but at food court prices. It's made up for by the portion sizes being a bit small compared to other restaurants. The reuben is an anchor on the menu, and a unique vegan food experience I'd recommend to any visitors.
Read moreIt's in the edgewater foodcourt, and I frequently hold meetups here just to be able to get food from Gladys. There isn't much quiet seating, so perhaps not the best spot if you want a more private romantic evening.
Pros: Food/ingredient quality, Presentation, Seasonal menu
Cons: Small portions, Noisy

Great spot - Edit
This restaurant is one of many in a dinning hall/public market setting. The restaurants were around the perimeter of a seating area with nice picnic benches. You order at the counter and they give you a beeper. I ordered the charred Caesar and mushroom risotto. Both were SO GOOD! I love the crunchiness and saltiness of the Caesar. The risotto was creamy and flavorful. I also liked that the dining area had a water spout with glasses. Good mix of all kind of people and even families with young kids! Great space and amazing vegan food!

Very creative dishes - Edit
Like others have said it is in a market place but we found Gladys and had to try it. Suggestion is to get a beer at the brewery and they let us even have our dog on the patio. But the food was insanely creative. Thank you for providing us with another fun vegan option!

How so good??? - Edit
The menu online looked good so we decided to come out here without knowing the area at all. We didn’t realize it was in a food court and were a little worried we had made a mistake. But we ordered the summer spinach salad, tofu piccata and nduja toast, and it was all so good. The toast was one of the more creative veggie toasts I’ve had—lupini beans, fennel and romesco, so yum. I highly recommend. Think we might want to try the Reuben next time.
Read moreEdit: Came back to try the root veggie Reuben, and it was delicious ! We also enjoyed the charred Caesar and braised tofu with hatch chili gravy (new fave).

Loved it! - Edit
I was very pleasantly surprised eating here! The quality is way beyond typical food court/hall food. The flavors were spectacular. My only slight “complaint” is that the wooden fork/knife was no match for the toast I ordered so it ended up being a messy eat. I will 100% be back.
