Potential, but not quite there yet - Edit
This is one of those reviews that's a bit difficult for me to write, because it hurts a bit to give a middling rating to a spot which is clearly run with love as a passion project -- especially as someone who is also passionate about vegan cooking. It's a small little stand with a friendly girl who's running the whole thing with one assistant, so not an easy task.
Read moreUnfortunately the food just isn't quite there yet. Nothing was bad, it just wasn't memorable for me. I think with a few tweaks it could be a lot better: reformulating the the seitan to have a meatier chew and less sponginess, sautéing the boneless bites in sauce to fully coat them with flavor and caramelize it a bit, using something like pea protein in the hot dogs and burgers to help the patty stay together and have a texture with real chew that doesn't get lost in the bun and condiments, and switching from bulk fries to made-in-house.
Between the staff, fun theme, and a super cute menu, the bones for something great are definitely here and I hope to see this spot improve next time I'm back spending time in CDMX again.
