Better than expected - Edit
This bakery and dessert shop is located in Galvani Square and they also offer lunch during the day. They have an eggplant parmigiana on their lunch menu, which is made with tofu and is clearly stated as vegan. I wasn’t expecting much, since those kind of touristy places often serve mediocre food, but the dish was actually quite tasty. The prices are slightly above average.
