Nice soy latte in Rome. There are vegan eating options in theory, but when I asked, I could only have a croissant.

Many vegan options - Edit
You can find here a very friendly service (talkative!) and several vegan options. For example, I had breakfast with a nice slice of a vegan jam tart with seeds in the dough, tasty!
