Wonderful experience - Edit
We had the 5 courses vegan menu, and we weren't disapponted at all! It looks like a Michelin-star restaurant. A bit expensive, but in Copenaghen everything costs a lot... try this place and you will love it!

Great vegan menu - Edit
Ansvar has a great vegan 5 course menu. They focus on fermentation such as vegetables and bread. The service was friendly and we even got a 6th course. Nice view from the 6th floor close to the canal.

Its a must try for every vegan who visits or lives in Copenhagen.
This should be 5 stars because it's not vegan options, it's vegan with meat/fish options.
(happy cow disallows 5 starts for everything that's not fully vegan, this should be the exception)

Vegan Wednesday at Ansvar - Edit
This relatively new restaurant is on the 6th floor of the Scandic hotel by the river. Vegan Wednesday means their 5 course menu is available for the price of their 3 course menu. Rude not to, if you ask me..! We were not disappointed. Incredibly well thought out food, exquisitely presented that’s creatively born with an eye to the environment and using local produce. We even sourced a Danish bottle of white wine (like hen’s teeth). Gabrielle (from Argentina) predominantly waited on our table and was able to enhance our Copenhagen extravaganza with an in depth narration of each dish with her knowledge of the English language and personal humour. We learned the sourdough bread is reconstituted and baked from the day before’s offerings, culminating in the lightest, softest bread I can ever remember eating. Each savoury dish is thoughtfully constructed and is a delightful dream on a plate. If you like desserts then be prepared to enjoy individual ingredient tastes. We had a sorbet involving artichoke! Our personal palettes don’t particularly appreciate sweetness so regardless of the effort and presentation put into the desserts, the savouries far outstripped them but as always, that would be down to individual taste. A fantastic evening was spent feasting at this incredible restaurant, nestled inside a hotel on the 6th floor. Copenhagen, you have already stolen our foody hearts!

Amazing - Edit
I visited Ansvar yesterday evening on their "Vegan Wednesday". That means you get their 5 course vegan menu for the price of the 3 course menu. It was amazing and I was so full afterwards and I can eat a lot! All dishes were beautiful presented and tasted so, so good. I highly recommend this place. The restaurant is very nice decorated and has a great view. The staff very nice. Overall a very, very nice evening!
