Staff mixing up vegetarian and vegan

I‘m quite sure the place is not aware what vegan means bc the menu is really confusing regarding the vegan/ vegetarian label. The „vegan“ meat balls had a footnote saying „contains eggwhite“. On another menu item the meatballs were marked as „vegan“ and when I asked they confirmed it was all the same kind. In the end I had ramen with shoju soup, udon noodles which she showed me were vegan, seaweed and sweet corn. That dish was tasty, only lacking a protein source as there was no choice of additional tofu or sth. The staff was otherwise really helpful and nice, just do not rely on the labels.
