Not all vegan but plenty of options - Edit
We went to the Vaniglia at First Station in Jerusalem. It’s kind of like a gelateria. At least 50% of the options were vegan and clearly-labeled. Vegan flavors included chocolate, double chocolate, peanut butter banana chocolate chip, coconut, mango, etc.

Great Flavors and Great Service - Edit
When I went this location had around 5-6 sorbet flavors as well as 3-4 vegan ice cream flavors. I opted for one that was Lotus cookie based and another one called "bounty" that was coconut and chocolate chip flavored. Amazing combo (Lotus was much more rich and Bounty was very refreshing).
