More than a restaurant, this is an amazing culinary experience! - Edit
We have been to Sensible twice, and both times have been wonderful journeys with warm service, an intimate atmosphere, and food that is both a wonderment and pure joy. Incredible what these two sisters have created and continue to astound. I rarely write reviews, and this was a must as is your visit to this sensation!

Hier de dag zelf gereserveerd, wat maar goed was want men vroeg naar een reservering. De bediening is verder erg vriendelijk en goed opgeleid. De woensdag dat we er waren was het enkel mogelijk om per menu te eten; à la carte was dus niet mogelijk. Gelukkig was alles wel plantaardig. We bestelden allebei het 4 gangen menu, dat ook nog eens vooraf gegaan werd door een amuse.

Zowel de sauzen, combinaties als de gaartijden waren en point. Het menu sloot af met een crème au chocolat en perenijs. Voor die kwaliteit was de prijs schappelijk.
Het menu kan vergezeld worden door een bijhorend wijnarragement, maar ook de losse wijn-en bierkaart is aan te raden. Verder zijn honden welkom. De ruimtes zijn stijlvol ingericht.

We don't get the 5 star reviews honestly. The price is very high considering the ingredients they use. The main course was a bit like cantine food with split peas and beets, totally out of season. We would not come back here again.

We really enjoyed this interesting & creative gastronomic journey. We had the 4-course dinner, and most of the dishes come with a test tube primer for the taste buds featuring a light jus of a main ingredient in the dish, e.g. pomegranate, mushrooms, or an herb.

Expérience bluffante du début à la fin. C'est un véritable voyage culinaire. Tout est vegan si ce n'est le fromage d'origine animale mais une version végétale est également proposée. Excellent accueil. Ce restaurant mérite réellement une distinction pour mettre à l'honneur la cuisine végétale.

Really great restaurant. Plant-based food, delicious and sophisticated, quite affordable for this type of cooking. Really fine diner with a great selection of wine from the surroundings (the Cévennes).

We had the full 5 course tasting menu, and it was such a wonderful experience. The food was delicious and beautifully presented and the staff was very accommodating. The entire menu was vegan, although they did offer a cheese as a dish (outside the tasting menu), but they also had a vegan cheese option. Also some of the drinks contain honey.

The food and wine is local, organic, all plant based (some drinks have honey but there's no dairy anywhere on the menu), the people are friendly and love good food. It's not cheap but if you're into fancier cuisine this place is worth it.

Great gastronomic experience. A couple of options for each course, interesting drinks and food flavors. When I went, the menu was fully vegan, except from the optional and separate after-meal cheese. I have been told the menu changes every one or two months.
