Fantastic Entree, Great Beer - Edit
Only place I found to try a vegan version of a traditional Belgian dish in Bruges. Vol-au-Vent was made with seitan, and tasted like seitan chicken n’ dumplings minus the dumpings. Really good bechamel sauce and fantastic frites and beer. #1 Belgian place I’d recommend for vegans in Bruges, though that entree is our sole option.

One vegan option: vol-au-vegan - Edit
I added this place to HC because it is currently the only place in Bruges where you can have vegan vol-au-vent, a traditional Belgian dish.

So we both chose to have the 'Belgian classic' at 20.80€. You need to choose to have it with salad or fries. Which I find very strange (why not both? we traditionally eat it with salad and fries!). We took the fries. The fries were confirmed to be baked in plantbased oil, and the mayo was said to be vegan.
(Vol-au-vegan is also mentioned later on in the menu at 17,70 with the option to add side dishes, but none of the side dishes seem to be vegan).
It took about 20 minutes for food to come. A seperate pot with fries and a pot with vol-au-vent and a pastry on the side.
I immediately asked whether the pastry was also plantbased (because that is not so easy to find), and the waiter seemed a bit surprised and said he was going to check with the kitchen. About one minute later he came and said there had been a mistake and apologised and took our plates with vol-au-vent away, saying it was not vegan (not only the pastry, but the whole dish ...). Luckily we hadn't started the dished yet ...😡
So we were left with the fries and snacked on those for a while.
Then a while later, two new pots arrived, confirmed to be vegan. No pastry on the side though. We also didn't get mayonaise with the fries (I suspect they don't have veganaise - didn't bother asking at this point).
The vol-au-vegan was nice enough. We highly suspect it is the vol-au-vegan from supplier stuff'd (we've eaten it before at several occasions, at home and eating out).
The interior is very nice, very spacious and relaxed. And accessible with an accessible toilet (a rarity in Bruges). Toilets were clean and tidy. Service friendly.
Do take in mind it is a 'chicken' focused resto, with many chicken references (as in chicken jokes and art work), which can be uncomfortable being vegan.
Two stars because: At nearly 21€ I would love to have a vol-au-vegan with a salad AND fries AND a pastry AND vegan mayonaise. And bc of the mix-up.
This place can be an option if you are in mixed company (eg a family gathering, a business lunch), but I wouldn't return just for this one dish.
I hope they will increase their vegan offer and prevent mix-ups like we had.
