This spot was near our resort - it was really convenient to get food and the staff were really friendly! They have vegetarian and vegan options.

Two options for vegan main, either veggie or tofu. Several vegan topping options. The sauces aren't super tasty, but the bowls are affordable. If you need a quick bite you could go here.

Tasty poke bowl - Edit
Found this place with a long queue outside, was tired and hungry and saw vegan labelled food! Stopped and picked up the vegan poke bowl with tofu, added avocado and edamame was pretty good and nice size!

I had the veggie bowl. It was nice, but nothing special. I'm not sure its worth queuing round the block which I saw happening every night.

This is a solid choice if you're in Waikiki. You can get tofu (or vegetables) with your choice of rice, sauce and toppings. I like that the vegan bowls are cheaper than the non-vegan ones. Good value for money too.

Decent poke bowl - Edit
You can make your own poke or choose one of their pre-designed bowls. I chose the "Veggie bowl" as making my own would've been a lot pricier. I like that they have a brown rice option. Definitely could've used more tofu but all in all, it was a tasty meal. I ordered the medium which was still relatively small.
