Great vegan options

I really appreciate that this place has a tofu & veggies (yes, that’s an “and,” not an “or”) option you can order for your protein, and they folks who run the truck are really nice and welcoming. They are knowledgeable about vegan diets. I’ve been a handful of times now and they remember by now that my order is always vegan so I don’t have to remind them about omitting egg. The coconut fried avocado is incredible, and they do the best veggie spring rolls here where the cabbage inside gets perfectly caramelized.
