Many vegan options! - Edit
Floripão is a bakery/café with many (clearly labeled) vegan options. They have a specific menu with all the vegan options as well. We had some mini ciabattas with leeks and with olives, the vegan sandwich (with olives and caponata), an empanada with pumpkin and leeks, a focaccia with olives and a vegan chocolate cake.

Good vegan options - Edit
Most bakeries do not provide many vegan options, and I've seen a change in this bakery some time ago. They have veggie milk available and many good snacks that are originally vegan (like the caponata sandwich in the photo). Ovolactoveg sandwiches are also available. Some very traditional cakes in Brazil, like carrot cake with chocolate topping, are made available in their vegan version and are delicious.
