Oatmeal Raisin Cookies with Nutmeg

Preheat the oven to 375 degrees F.
In a large bowl, beat together the sugar, brown sugar, margarine, and vanilla until smooth and fluffy. Add the soy milk and mix until everything is well combined.
Add the flour, baking soda, salt, and spices. Add the oats and raisins and stir until well mixed. The batter should be thick but sticky.
Place spoonfuls of the batter onto an un-greased baking sheet, and press each one into a rounded shape. Bake for 12-15 minutes until golden brown. The cookies should be slightly soft and chewy.
Remove the oatmeal raisin cookies from the oven and allow to cool down. Enjoy!
