I wanted to go back to my roots, to serve the food my ancestors ate, real soulfood. This vision and the fact that I'm lactose intolerant helped me starting my plant-based Surinamese restaurant in Amsterdam (probably the only afro Surinamese 100% plant-based restaurant in the Netherlands).
