I'm glad you like our miso soup. My sister has made a lot of efforts to create this miso soup. For Japanese people, only kombu and shiitake mushrooms are enough to make soup stock. But it is a bimiso soup. But it would not be very tasty for foreigners. My sister added burdock, Chinese cabbage, and dried radish to the basic soup stock. Burdock is eaten only in Japan and Korea. It has many medicinal properties and an essential vegetable when it comes to curing illnesses. Serving umeboshi sushi-roll is my idea. I thought understanding why Umeboshi & Miso was helpful to save the life of atomic-bomb victims would be a useful information for all the people.(the reason is on our website: https:// www.msbento.com) I find it amazing that a collaboration between the universe and humans has created such great food all over the world.
