I usually do not respond to sarcasm as it is both highly immature and primitive but for the sake of clarity on this very important issue I will. 1. Informing people about the honest facts on any situation is hardly "trashing." On their website ,they ONLY state that their wheat ,rye and dinkel are organic. That is it. Leaving aside any possible animal and dairy products, this means that all of the vegetables ,nuts and fruits etc. that they do use are NOT organic -even if they are easily available. I find it extremely interesting that you were told by their staff that 95% of their ingredients are organic yet that fact is NOT on their website … If what the staff told you is correct ,then they could be easily certified by KRAV ( the Swedish organic certifying agency ) which they are not. After eating an almost totally organic diet for over 40 years and having travelled to over 30 countries I can tell you that any bakeries, cafes, and restaurants that are serious about using organic ingredients virtually always provide a complete ingredient list on all the products that they produce ,serve or sell and clearly mark which ingredients are organic and which are not. This is not done by Konditori Genuin-there are no ingredients listed on the website for the many food items that they produce. Organic ingredients must be clearly stated and must be certified by an organic certifying agency-that is the ONLY guarantee that the consumer has that the ingredients used are truly organic. People who truly care about using organic ingredients will use only certified organic ingredients -and not just ask the consumer to rely upon their word of mouth in the worldwide multi -trillion dollar organic food industry. 2.About myself having referred to another bakery (Skeppsbron Bageri ) but it not being listed I do not know what happened. I wrote a review and sent it but perhaps was overtired and did something wrong. Nevertheless, it is excellent bakery and uses only 100% certified organic ingredients as does the also (excellent) restaurant:"Kalf and Hansen." ( Note: I have absolutely no connection to either of these 2 businesses whatsoever nor to any health food bakery,restaurant or store etc.) I also want to thank the people at " Happy Cow " for the crucially important work they do !
