That's all good and well, but why not use a vegetarian alternative to Parmesan cheese? As you point out there are many. I don't have a problem at all with the use of Parmesan cheese in your menu, but I do think - and I want to emphasise this point - that no business in the hospitality industry should refer to their customers as "radicals". It is inconsistent and incorrect to market oneself as a vegetarian restaurant but use a non-vegetarian cheese. You either strive to be a vegetarian restaurant or you can be a mostly vegetarian restaurant. Both are acceptable choices, but you can't call yourself something you are not. Finally, let me comment on my star rating. The rating was purely based on the culinary experience which was overall average, hence the 3 stars. I did not deduct any stars for the use of non-vegetarian cheese, but I found it worthwhile to point this out to the community because, as you might have noticed, people do care about these things.
