Leek udon noodles: sub the egg out. I opted for more mushrooms. Loved this dish and would order again.
Overall the food was great and while all options needed to be modified to be vegan, we were grateful how understanding and accommodating the staff was. The food was great.

Incredible flavor and quality - Edit
We had the vegan gyoza and two of the three vegetarian ramen noodle soups minus the egg. The wild chanterelle Negi onion was hands down one of the best soups I’ve ever had. The Thai basil coconut shiitake was also delicious but that umami chanterelle was outstanding.

Small restaurant with delicious vegan noodles and more - Edit
A generous serving of house-made organic noodles with local veggies in miso broth, plus vegan options for rice bowls, gyoza, and mushroom onigirazu (rice wrapped in nori). Be sure to specify vegan and no egg. Rice noodles available for GF option. Highly recommended to make a reservation and order ahead online, and be prepared for slow service as they make everything with care, plus are often busy, fully booked with customers.
