Happy vegan 😊 - Edit
Turned up at 12pm for lunch with no reservation/warning (1 vegan, 1 non) and the lovely couple said they could prepare something if we gave them half an hour. Came back at 12.30pm and enjoyed an excellent 3 course lunch 😊 very happy indeed. Definitely recommend - try and give them notice if you can.

I showed up, unannounced, on a Thursday evening. As others have mentioned in their reviews, there is a vegetarian 3-set menu. When I asked the chef if it would be possible to have the vegan version, he understood immediately what that means, and he could make a vegan version on the fly. Both the chef and the woman handling the customers were very helpful.
Read moreThe first dish was a salad containing, among other things, beets and melon, which I enjoyed. The second dish, was a tomato "beef", served with different vegetables. It is the best tomato dish I've ever eaten, with a very intense tomato taste. For desert, he served a poached pear.

My vegan wife and I had one night in Albi and noting that the two specifically vegetarian restaurants were lunchtime only, we tried the Papillon, remembering to ring through to warn them. The owner/chef and waitress were both helpful and he really went out of his way to offer us an excellent meal. They have a vegetarian menu anyway but, for my wife, he produced a varied and substantial vegan salad, followed by a dish of quinoa, mushrooms etc and a dessert of a poached pear. I also had a salad, with Mozzarella, followed by pasta with a pistol sauce and as good a chocolate mousse as I have had for a while. The presentation of the food was fine if unspectacular but the taste was excellent. The restaurant itself has a pleasant ambience with a few tables outside in a small, quiet road. If you are spending an evening in Albi, you can always have a pizza or a salad but it really is worthwhile making an effort to find this place for something just a little more interesting. And it is not expensive.

I went here with my volleyball team of 12 people. With a vegan (me), vegetarian, and a muslim (halal), we have a hard time finding a restaurant where the whole group can enjoy a meal together. We also needed a restaurant that stays open late, because we had a match that night that finished after 10pm. I called Le Papillon the day before and explained the situation. They were happy to stay open for us, even though we wouldn't be able to get there until 11pm (they usually close around 9:30-10pm). The owner knew exactly what "vegan" meant without me having to explain it, and assured me that he would have something vegan on the menu.

Most of their menu is what I would call traditional French food (duck, seafood, foie gras), but the dish he made for the veggies was very flavorful, and everything was really fresh. He even had a vegan dessert (a cooked pear with chocolate sauce), which was quite good. Prices were reasonable (20€ for the vegan starter, main dish and dessert).
If you're looking for a restaurant for a group of veggies and omnis, this is your place!

Even though the "Vegetarian menu" included salmon, the chef kindly proposed to replace the salmon with roquefort cheese, for the great pleasure of my vegetarian girlfriend.

On the vegetarian section, there is only one vegan option : The Phillipine plate. It was really verey very good !!! The owner came to see me and told me : "the next time you come, call me before and I'll prepare to you a special dish" :-D

As a starving vegan in the Provence region of France, this place was a savior. There is a vegetarian section on the menu. The owner(s) are from California and were happy to create a vegan meal for me.....I suggest the burrito :)
