Bomb-a** taqueria with a vegan menu in far east Portland :-) - Edit
The owner is so nice and the beans and rice themselves pack so much flavor that I often live off them for a week, along with some fresh salsa molcajete from the grocery store :-)

Really good vegan Mexican food - Edit
Food is so good. We eat there 1-3 times a week. Wish this app allowed 5 stars for this place (I guess because it's not 100% vegan only). Sometimes the owner Oscar makes black beans which are the best! They even named a burrito after me, the Beth burrito.

Super Burritos in Super Mercado - Edit
I ordered the vegan breakfast burrito, which includes beans, rice, potato, tofu, onion, cilantro, and soy curls or soyrizo. Mine had bell peppers and no tofu (that I noticed), but it was still good. It was very flavorful even without the offered hot sauce.
