There was only one kind of vegan cornetto (cornetto vuoto, i.e. cornetto without filling). Capuccino could only be ordered with soy milk.

Only Coffee with soymilk available - Edit
Coffee with soymilk was the only vegan option available, it was also not labeld in the menu.

Nice vegan ice cream. They had a lot of sorbets & one dark chocolate flavour.
