Butternut Squash Cakes to Die For!

I'm so impressed when a restaurant creates creative and excellent vegetarian options. I had two main course options at Galyn's, and I selected the Butternut Squash Cakes. They were wonderful, served with a non-dairy tsaziki sauce, pickled onions, wild rice pilaf, and sautéed kale. If I were going to be in the area longer, I'd absolutely return!

Pros: The Squash Cakes were tasty, Sautéed kale was wonderful, I love the brown/wild rice mixture
