Very good mix of options - Edit
Among the many nonvegan dishes, there are loads of classic vegetable dishes which are considered side dishes, but which altogether will make a terrific meal, like zucchine alla scapece, aubergines w red sauce, escarole, potatoes with string beans and tomatoes, tomato salad, spinach, a variety of mushroom dishes and more.
