Many clearly marked vegan options. Plant milks for coffee drinks. Overall pretty good.

LOVE LOVE LOVE CUSHMAN - Edit
Wow do I love Cushman Market. It is a neat place and the food is so good, it is my favorite breakfast place on the weekends! They have a vegan menu and the sandwiches are delicious! My go to is the primrose. Especially when I'm hungover.A primrose and home fries saves my life after a night of drinking. The lily is also really good and more of a lunch sandwich, and the pullman hobo is also a really great bowl of potatoes and veg and tofu, yum!!! 12/10 would recommend going to Cushman and trying out their vegan menu! They use fakin bacon, vegan cheese slices, and even vegan mayo for some of their sandwiches. They have bagels with vegan cream cheese but I'm not the biggest fan of the bagels, they're always undertoasted or slightly stale or something.. just kinda chewy and hard to bite a piece off. The shop also sells some of these vegan products as well as some interesting beers, coffee, knick knacks and other goods.

grilled tofu breakfast sandwich! - Edit
Cushman is an early morning place. They only serve food until 3pm.
Read moreTheir house salad is really good and always fresh, with beet shreds, avocado, and chick peas.
Coffee is great. Can sit for hours and do work. Occasionally gets crowded in the mornings and is better in the afternoon (everyone wants Cushman breakfast sandwiches).
Speaking of breakfast sandwiches. It's not on the menu, but here's what I order and they are happy to oblige: GRILLED TOFU breakfast sandwich on an everything bagel, with spinach, avocado and red onion. You can pick whatever veggies. This creation came out of the blue one day when I asked them what their vegan options were. The woman said not much besides granola with soy milk. I looked disappointed and she shrugged her shoulders and made something up that she had seen her cook make for another employee, "Well, maybe we can put grilled tofu on a bagel." Now we're talkin' !! I order it every chance I can get :).
2019 EDIT: They now have vegan breakfast options on the menu, check their website! Here is a new pic of the vegan bakon sandwich.

Kitchen closes at 3 pm - Edit
Small selection of vegan sandwiches on a mostly typical coffeshop menu. They had one vegan granola bar

Cool spot - Edit
Update:
Read moreThey have a new set of vegan options, including five or six sandwiches, avocado toast, and vegan cream cheese for bagels. They are a welcome addition. I had the hash brown sandwich with fakin bacon, cheez, tomato, and spinach. It was good but not great. It was on the small side but fair for the price ($5.50). I’m eager to come back and try their other new vegan offerings.
Nice, casual cafe with cool decor. They have a lot of vegetarian sandwiches, but not a lot of vegan ones.
That said, the avocado and jicama sandwich I had was good, and I also added some homemade vegan sausage that was quite tasty.

fun, comfortable cafe and general store - Edit
I love a trip to Cushman for the chance to sit comfortably and enjoy the ambiance and hot drinks. There is colorful interesting artwork around the cafe space, and the seating area offers plenty of space to hang out.
Read moreI often have been just for drinks, and have thoroughly enjoyed the coffee, mochas, chai and teas. The staff have always been knowledgeable about items that are and are not vegan, and have made drink recommendations.
I have eaten Cushman's food several times in the past, and as I recall it was good. The menu items always look wholesome, though vegan choices do not abound. I still think Cushman is worth a try for the experience and enjoyment of the space. If you know ahead of time you will only have a few vegan food choices, and ample drink choices, you will not be disappointed.
Pros: great atmosphere, great hot drinks, locally owned, socially consious
Cons: location is not always convenient, few vegan food options
