Opened Nov. 2021. There are two restaurants at this hotel. This one is all-vegan/plant-based offering a variety of dishes with a creative and elegant touch. Also has various drinks and desserts. It is a pricey place with a very high standard. Fancier than other vegan restaurants in town. Is an alternative when you want to celebrate something special or have a gastronomical experience. Restaurant calls their food “high vibration food”. Open Mon 7:00pm-9:00pm, Tue-Sat 6:30pm-11:30pm, Sun 12:00am-12:30am. Hotel's Instagram states: Tue-Sat 7:00 till late. Please call in advance.

The restaurant is more on the pricy side for me, but really worth it! If you can, go there!!

Came here for dinner on a Saturday with a reservation. They were a bit empty. We ordered the elote corn that was kind of like ribs where you eat the kernels of the Cobb. Then the healthy roll which was wrapped in cucumber. Alright, but I was expecting a bit more. We also got the oyster mushroom carpaccio which was served with rice and roasted seaweed. No spoons though for the sauce.

With a limited selection of four rolls, the craftsmanship is nothing short of remarkable. The "santé" and "la hora del amor" rolls, in particular, offer an unparalleled taste experience that simply must be experienced to be believed.
But the excellence of Casa Sanz doesn't stop at sushi; the menu impresses throughout. The raw rice paper roll (alta vibración), jackfruit gnocchi (confit de invierno), capelleti, and the sugar-free hazelnut dessert (domo de avellana) were all absolutely divine.
Casa Sanz is more than a must-visit destination in Santiago—it's a worldwide culinary treasure. I'm seriously considering planning a trip to Santiago solely to dine here again.

And I don’t say that lightly. Worth every penny. Blown away by the creativity of the menu let alone the actual presentation and flavors. The decor is gorgeous, the vibe fantastic, and the staff friendly. All that with live music and vibrant and robust alcoholic and non-alcoholic drink menus, I never wanted to leave. One of the best vegan restaurants in Santiago can be found inside the quirky and stylish Hotel Bidasoa. Long before the food, stepping into Casa Sanz is an experience. You're greeted by friendly staff and led into a teal wallpapered dining room with an arboretum-inspired pink ceiling, green bar, and artful placemats; then it brings it all home with its creative and tasty food and drinks. - Spice - Sweet - Tropical: if you’re a fan of tempura rolls, as I am, this one is a go-to with crispy shiitake, pineapple, and a touch of sriracha in one bite
- Tataki Mari: a creative and fresh take on tofu topped with chives, ginger, and mango, try if you want something different
Be sure to start with the cappelletti de estación, a dumpling-proxy stuffed with mushroom duxelle and marigold seed ricotta, and topped with wild mushroom froth. And round it all off with a pisco sour, chileno-style. This was our last dinner in Santiago and of the entire trip and it was one of the best.

We went to what might possibly be the best #vegan restaurant in the world , Casa Sanz in Santiago de Chile. We started with 2 completely starters, the corn ribs and the watermelon tuna with goat cheese and the love making sushi rolls. Don’t get me wrong: the place is very nice, the service is great and food is interesting and tasteful. I wish there were more such restaurants in the world, especially in Chile, where the majority of the vegan offer is fast-food style.
Read moreHowever I don’t think I will be back soon.. simply it is too pricey and some of the dishes were just not so well executed or with such amazing ingredients to justify the price. It is probably one of the most interesting place I have been recently, but I guess that is because Santiago lacks this kind of vegan gastronomy rather then because of the quality of the food or the creativity of the dishes itself.
Overall a nice experience and I recommend to try it at list once 😉

Los platos son maravillosos, la atención increíble y el lugar hermoso. Pedimos un chupe de alcachofas, un confit de invierno que eran unos ñoquis increíbles con jackfruit, unos rolls spice-sweet-tropical, otros llamados Alta vibración (mis favoritos, muy fresco y novedoso), el risotto de mote y de postre el tiramisú y el domo de avellana. Todo estaba perfecto y bien logrado, con sabores nuevos que hicieron de la cena una experiencia. Además nos dieron una sopita muy buena de cortesía y los tragos estaban riquísimos. Volveré sin dudarlo.

I’ve been looking for a place like this a couple years. It seems like Santiago doesn’t have vegan gastronomical experiences that make your senses blow away. Casa Sanz gave me that sensation. It’s pricey, though. Definitely not affordable on a daily basis for local people. But every peso spent is well returned. The menu, the people, the tunes! Everything there made me enjoy a social bday evening and want to come back anytime possible. Their flavors are not based on a lot of oily ingredients or salt (except, the corn ribs). I absolutely recommend to visit this place, at least once.
