    Instructions

    Boil the water in a 5 liter pot. Add salt and boil for another 5 minutes.
    Next add the remaining ingredients (except the pineapple juice, peanut butter and toppings) to the pot. Continue cooking over high heat for 10 minutes, then turn to low heat for another 15 minutes.
    Cook the rice noodles according to package instructions. Drain all water from the noodles and place in a large serving bowl.
    Pour the broth mixture over the noodles. Then add pineapple juice and peanut butter and mix well.
    Let cool, add your toppings, serve and enjoy!

    Ingredients

    3 liter water
    1 tablespoon sea salt
    2 tablespoon coconut sugar
    2 carrots, diced
    5 red radishes, cut in half
    1 sweet red apple, cut into 8 sections
    2 tablespoon peanut butter
    1/2 cup fresh sweet pineapple juice
    1 pack rice noodle, of your choice

    For the topping:
    5 slices of fried tofu
    Fried mushroom, to taste
    Sprouts, to taste
    Cilantro, to taste
    1 teaspoon roasted peanuts

      I made an account on this website specifically to comment on how terrible this recipe was. I made this because I had Mi Quang noodles in my pantry for a long time and didnt know what to do with them. The broth smelled awful. Apples, carrots, and radishes do not function well together in boiling water. These veggies were WAY to sweet to put together. Then the recipe directs one to add both sugar, and then pineapple juice at the end, furthering the already unnecessarily sweet broth. Loading this up with chili sauce made the dinner somewhat passable. Really the only good parts of this recipe was the tofu, mushrooms, and noodles (all components of the meal that this recipe does not guide you on). I would advise against making this recipe, and will definitely NOT be making this again.
