Herby Parsley Root

            Instructions
                    
                        ▪Wash and cut parsley roots into sticks similar to french fries. Blanch in boiling water for 2-3 min.
▪In the meantime finely mince the garlic & heat the oil on low heat.
▪Drain the parsley root sticks & add them to the pan, add garlic & thyme and stir-fry for a minute or until garlic becomes fragrant.
▪Add syrup & vegan butter/margarine, salt to taste.
▪Add soy sauce and herbs, lower heat. When the soy sauce has almost disappeared, turn off stove, drizzle lemon juice and top with sunflower seeds.
▪Serve with any kind of protein/carbs, like rice, quinoa, couscous or mashed potatoes.
