You seem really combative and hyper critical of everyone but yourself. The owner is a first gen Mexican who imo caters of the Latinx community that grew up with these flavors. You’re biases of what you normally see as vegan (privileged, upper class, white) and assuming that this establishment gives a shit about that specific clientele over another, or that his decisions on running his business are based on that are moronic. You likely don’t hold the same critiques for a Michelin star eatery with some bland European cuisine, but because it’s not you’re in your feelings about prices and forms of payment. You’re exactly the type of person the owner probably doesn’t want eating at his establishment to begin with so have fun missing out.
